Ingredients
4
eggs
2 cups sugar
1
cup vegetable oil 2 tsp. baking powder
2 cups pumpkin 1 tsp.
baking soda
2 cups
flour
3/4 tsp. salt
2 tsp.
cinnamon 1 cup raisins
1
cup chopped walnuts
ICING:
3 oz. package cream cheese, 1/3 cup butter, 1 tsp. milk, 1 tsp.
vanilla, 2 cups powdered sugar - blend till smooth.
Directions
In
large bowl, beat eggs till foamy. Add sugar, oil & pumpkin. Beat 2
minutes at medium speed. Add flour, baking powder, soda, salt &
cinnamon. Beat 1 minute on low (mixture's thick). Fold in nuts &
raisins. Pour into greased baking; bake at 350 degrees, 30-35 minutes
- test with toothpick. Let cool before icing and then cut into bars.
